Resumo
Starch is an heteropolymer composed by a highly branched chain: theamylopectin; and a linear chain: the amylose. Glucoamylases are enzymes that hydrolyzeglycosidic linkage at the end of starch chains releasing glucose. In this work it wasdetermined by a mixture design with starch, amylose and amylopectin that theimmobilized glucoamylase of Aspergillus brasiliensis mainly hydrolisys amylopectinchains.
